INGREDIENTS:
2 leg /thigh sections of duck
1 T veg oil
Pan sear duck (high heat) until golden brown and crisp, like bacon, the meat will
remain raw.
In a covered oven pan:
Duck from above
1 cup chicken stock
1/8 stick butter
1/4 cup chopped dates
Braise covered at 375 for 1.5 to 2 hours (until fork tender)
