Braised Duckling with Date Sauce

Ralph Filipelli from Luna's Catering is in the kitchen to show an easy recipe involving duck and dates.

INGREDIENTS:

2 leg /thigh sections of duck

1 T veg oil

Pan sear duck (high heat) until golden brown and crisp, like bacon, the meat will
remain raw.

In a covered oven pan:

Duck from above

1 cup chicken stock

1/8 stick butter

1/4 cup chopped dates

Braise covered at 375 for 1.5 to 2 hours (until fork tender)

More rain fell across the area Saturday night and the threat for rain will continue throughout the day on Sunday but the good news is that most will stay dry. Throughout the day, expect more clouds than sun but we could see a little more sunshine during the afternoon. An advancing cold front could bring a stray shower during the afternoon.
