Summer Vegetable Salad

SUMMER VEGETABLE SALAD
Makes 6 servings, ½ cup each

All you need:
½ cup chopped red onion
1 medium cucumber, sliced, quartered
2 medium tomatoes cut into wedges
3 tablespoons Hendrickson's Sweet Vinegar and Olive Oil dressing
1 tablespoon chopped cilantro

All you do:
1.Combine onion, cucumber and tomato in a medium bowl. Stir in dressing and set aside for 10 minutes.
2.Sprinkle with cilantro just before serving.

Nutrition Facts per serving: 40 calories, 0 g fat, 0 g saturated fat, 0 g trans fat, 0 mg cholesterol, 140 mg sodium, 9 g carbohydrates, 1 g dietary fiber, 7 g sugar, 1 g protein. Daily Values: 8% vitamin A, 15% vitamin C, 2% calcium, 2% iron.
